It is often called the "perfect grape" (Secondat, 1785), because no other variety is at the same time so rustic and rich and elegant. It produces small grapes with a good peel/pulp proportion, and therefore a great chance to extract coloring and fragrant components, but that almost always requires the use of wood. It is resistant to frost, tolerates Bothrytis and then insistent rains do not annoy it. It can be gathered very well with machines without affecting the quality of wine, it matures in a very homogeneous and constant way and is a vine which is constant in production, thanks also to the reduced size of the bunches. However, it is sensitive to wood diseases and therefore it must be pruned very carefully. The resulting wines have notes of wild berries (blackberries, blueberries and red currants), but also hints of black pepper, in addition to an astonishing array of spicy flavours that are obtained making wine in small wooden barrels. In very sunny areas it also assumes a characteristic balsamic mint eucalyptus note, thanks to the activation and production of jasmonic acid (a metabolite for rasveratrol). Over the years, it develops notes of goudron and truffles, that are very peculiar. It began to be used in Carmignano, but revealed its great potential firstly in Bolgheri, with the creation of Sassicaia, and then in Chianti Classico, with various SuperTuscan, where it starts to be blended with Sangiovese or is vinified alone, to give very valuable products.
