Type: still red wine
Color: purple red tending to purple.
Aroma: at your nose, its herbaceous note blends with red fruits like black currant and blackberry.
Taste: in your mouth the elegance of the fruit combined with a full body creates an important and elegant persistence on your palate.
Typical food pairings: great wine for red meat roasts, it marries happily game birds, venison and game, flavory and seasoned cheese.
Storage: it keeps its characteristics for more than 3–4 years; like all wines it should be stored in cool places (below 18°C) and with low light, not subject to high changes of temperature.
Harvest: end of September harvest by hand into crates.
Winemaking: maceration of grapes before fermentation in tanks at controlled temperature and atmosphere for about 8 days, then starting of the alcoholic fermentation through selected yeasts; another 15 days of maceration of the crushed grapes in which, through the practice of the delestage, seeds are extracted.
