For over five generations, Claudio Fenocchio, owner with his brothers and winemaker, explains that our company produces, vinifies and ages great wines from grapes coming from its own vineyards in the heart of the typical area of Barolo. My great–great grandfather Giovanni, the progenitor of my family, used to say: everyone makes wine in the same way, simply because it has to be done so, it is not up to us to change a method, a culture.

The Barolo of the Fenocchio company is achieved through a very long maceration, not less than ten days, without the use of rotary macerators.

We do not use shortcuts: fermentation is completely natural, Claudio continues. The work is carried out completely by the indigenous microflora, without added yeasts. The temperature remains constant only through the daily pumping.

Barolo is a noble and demanding wine, which is achieved without force, without acceleration, according to its times and its rules. It was created to be waited and to evolve over time.

Our Barolo, Claudio says, remains for five months in stainless steel vats and two years in oak casks of large capacity (up to 50 hl) and aged in bottle for a year. Therefore, the steps in barrels, that would be overly flavored, are avoided, so as to maintain as much as possible the unique character of this wine. The passage of time confers complex and intriguing aromas, for palates ready to seize the pleasure of never predictable aspects, of great charisma.

The Fenocchio brothers personally take care of their vineyards in the processing that is performed with modern techniques, designed to preserve the ecological balance and with great respect for the environment. The meticulous and attentive work, without too much reduction in productivity: around 55 quintals per hectare for Barolo DOCG Villero and 70 quintals, instead, for Barolo DOCG Cannubi and the Barolo DOCG Bussia.

A balanced yield, not excessive nor fiercely reduced, involves a nice balance between concentration of tannins and coloring matter of wine, without penalizing the finesse of the wine. Barolo is a wine that gets into your heart, stems from a unique land, to remain a unique and inimitable wine.
