The company is located in the municipalities of Biancavilla, Santa Maria di Licodia, and Valverde (Etna south territory) and extends for a total of 18 hectares, of which 6 are vineyards and 12 are olive groves with cultivars of Nocellare Etnea, Nocellare Messinese Biancolilla and Moresca, all varieties required for the DOP Etna. The company was founded at the beginning of the twentieth century, but was refounded and innovated by the will of the La Rosa brothers Giuseppe and Marioche, who were doctors, but were not able to resist the lure of the ancient traditions of their family.
The wines produced under the direction of the oenologist Giuseppe Cascio are 3 labels for a total of 10,000 bottles a year. Among the services offered by the company, in a recently restored country house, there is the opportunity to organize meetings and cultural events for a total of 60 participants, as well as to use the premise of the restaurant with traditional or revisited by our chef dishes, for a maximum of 80/100 people.
Our vineyard is situated in the town of Castiglione di Sicilia in Passopisciaro locality, in Contrada Feudo di Mezzo, 700 meters above sea level, located in a very ancient extinct crater, where the Nerello Mascalese and Nerello Cappuccio native vines are bred as "bush vines", supported by traditional pole chestnuts. The old part of the vineyard consists of strains that have an average age of 80 years.
We wanted to embrace the philosophy pursued in this territory of ancient farming tradition, the "bush vine", the manual cultivation, the respect of the Etna territory, the dry stone walls and the "rasole" in lava stone. The sandy–volcanic soil, the temperature excursions typical of 700 meters above sea level, a mountainous territory but in Sicily, the low yield per hectare (6,000/7,000 kg) given by pruning and cultivation with "bush vine" method, the harvest that is performed by handpicking not before the second half of October and finally, the aging in small oak barrels for 12 months.
What comes out is easy to understand: a red wine rich in essences and aromas, mineral notes; its smell is ethereal, with hints of ripe fruit, spices, hints of tobacco and vanilla, its flavour is dry, full, tannic, harmonious and persistent in taste. Ideal for red meats, game and mature cheese.
Cantine Don Saro arise in the wonderful land of Linguaglossa on the slopes of Etna. Our complete production has been created combining the centuries–old traditions handed down with the support of new technologies, that have become indispensable to be competitive in the global market. Tradition and innovation have always been our guiding spirit.
The winery is located at the top of an amphitheater entirely planted with vines and in 2007 it has been completely renovated following the new technological concepts, with stainless steel tanks and oak barrels for the aging and maturation of wines.
The barrel cellar, all in French oak and enabling the storage of 3,375 hectoliters, gives the opportunity to pamper wines expertly, so that they can express at your palate all the strong and incisive character of the nearby volcano.
In the winery there is also a wide Tasting Room, where we welcome large groups of enthusiasts, students and teachers of Onav.
In 1887, in Santa Venerina, the millstone and the cellar of the Scalia winery developed around a farmhouse in the Contrada Fago, planted with native vines of Etna.
From the viticultural and winemaking experience of the founders of the Scalia Maugeri Romeo farmhouse, nowadays you can appreciate the two Nerello of Etna types with Mahàgma, and the Nerello Mascalese in single–variety of Ciàuru, the most recent creations by Cantina del Fago.
With the complicity of the adjacent "I Giardini di Villa Fago" restaurant, you can taste Mahàgma and Ciàuru in accompaniment to the delicious traditional Sicilian dishes, in a context that makes you get lost in vineyards, citrus orchards, olive groves and the gardens of Villa Fago, all under the majesty of the volcano on one side and the view of Taormina and the Ionian coast on the other.
We wanted to call Al–Cantàra our company because the wine comes from grapes grown in the territory of Randazzo, in Contrada Feudo, lapped by the river Alcantara, which in Arabic means "bridge". The "bridge" as mean and as a symbol of union of three factors: poetry, art and wine. A good wine is "poetry" and to do that "art" is needed.
This is the message our company wants to convey. No coincidence that we have called the red wine "o’ scuro o’ scuro" from the title of the anthology of Sicilian sonnets by poet Nino Martoglio, and the white wine " luci luci", from " luci luci picuraru", those fireflies of which the poet speaks in the first of his sonnets. The other products have names of poems by Martoglio, too. We thank Prof. Sarah Zappulla Muscarà for the anastatic prints of the poems and Alfredo Guglielmino for creating unique labels.
The young but well–made company has managed, in a short time, to establish itself in the area thanks to the quality of the wines it produces.
The company has a cellar where they the most cutting–edge technology for vinification and aging in barrels has been introduced.
The continuous updating of technology, and in the cellar, in the vineyard, which respect of the natural features, made the Lo Certo family obtain in 1998 the certification for the production of grapes with the method of organic farming.
Our wines are made only from selected grapes fermented at a controlled temperature, produced with the method of organic farming certified by of the QC&I organic inspection body, CEE 2092/91 Regulation, decidedly of superior quality wines.
Our technology is highly advanced. For the processing of wines we use, effectively, soft press and thermo–conditioned vats, we have a bottling plant and cold storage where the wine is stored for refinement.
The vineyards of Etna grow on sandy soils of volcanic origin, rich in texture. This viticultural district was also known by the civilizations of the past, given the ancient origins of viticulture in the area. We have news from the poet Theocritus in the third century BC and further confirmation from a few coins of the fifth century BC that have come down to us.
Etna was the first designation of origin to obtain this recognition. The Doc Etna, effectively, has been recognized with DPR of 11.08.1968 published in the Gazzetta Ufficiale on 25.09.1968. The specification, moreover, remained intact since its drafting, maintaining the prediction of the native vines of the volcano unchanged, for the production of Etna DOC in its different types Rosso, Rosato, Bianco and Bianco Superiore.
The production area of the designation of origin covers part of the territory of the municipalities of Aci, Sant’Antonio, Acireale, Belpasso, Biancavilla, Castiglione di Sicilia, Giarre, Linguaglossa, Mascali, Milo, Nicolosi, Patern, Pedara, Piedimonte Etneo, Randazzo, Sant’Alfio, Santa Maria di Licodia, Santa Venerina, Trecastagni, Viagrande and Zafferana Etnea, on the slopes of Etna, in the Province of Catania
