The first academic program in Italy entirely dedicated to wine tasting according to the scientific university method, open to expert tasters or industry professionals wishing to further their knowledge.
A project born in 2019 from the collaboration between ONAV (National Organization of Wine Tasters) and the Department of Agricultural, Forestry and Food Sciences of the University of Turin , now in its sixth edition .
The SUMAV course is designed for those seeking advanced academic training in wine tasting : tasters, industry professionals, oenologists, sommeliers, as well as professionals and enthusiasts from diverse backgrounds. Participants acquire scientific tools, methods, and a common language to competently read, evaluate, and describe wine, developing university-level knowledge of organoleptic analysis and oenological, agronomic, and chemical skills , becoming effective technical and scientific communicators.
The program consists of 60 hours of lessons , from October to December 2025, at UniASTISS (AT). Each session includes a theoretical part and a practical technical tasting session, with selected or experimental wines aligned with the topics covered. Lessons are taught by university professors and specialized technicians , capable of combining academic knowledge with a practical and informative approach.
Access is reserved for 100 participants , each qualified as an Expert Taster . At the end of the course, upon passing the final exam, the title of Master Wine Taster will be awarded: the highest ONAV training level (3rd level) and a requirement for registration in the National Register .
"SUMAV is the only advanced training program that bridges the world of tasting with university education, " says Vito Intini , President of ONAV . "The Master Taster title represents the highest recognition in the wine industry today, certifying technical skills, sensory sensitivity, and the ability to critically evaluate wine."
The project is coordinated by the ONAV Scientific Committee , chaired by Professor Vincenzo Gerbi , with the contribution of Teresa Bordin , Gianluigi Corona and the Director Francesco Iacono .
SUMAV is not just a course : it is the beginning of a new season of wine dissemination , where experience and knowledge meet to train aware, prepared and passionate professionals.
