La Togata is owner of a small company in Montalcino (Siena) consisting of an old farmhouse dating back to the seventeenth century, at that time subservient to the Castle of Argiano, and of a few hectares of land devoted to the cultivation of vines and olive trees.

In particular, regarding vineyards, the company has the availability of vineyards registered in the Brunello Register in the area of the Pieve of S. Sigismondo, in that of Montosoli and in that of Pietrofocaia. The lands are located at different heights and with exposure to the sun until sunset. The age of vineyards, from which grapes intended to produce Brunello are selected, is over 20 years.

The company has as its objective the production of a limited amount of bottles of Brunello di Montalcino, with unique characteristics in body, elegance and fragrance. The vineyards, extremely healthy, are subject to a double thinning of the bunches and, during harvest, the average criterion of choice, in the good years, is three out of five clusters. The grapes obtained in this way are subsequently selected in the cellar, where they are processed according to the old tradition. Wine, after being left to age three years in the barrel, is aged for at least twelve months in bottle before release. It has ruby red color, fruity bouquet, harmonious and velvety flavour, and is especially suitable for long aging.
