Citille di Sopra was founded in 1997 with the company transfer by the Innocenti family to their son Fabio. Already owner of part of the company since 1992, Fabio decided to undertake the winemaking activity to accompany his ten–year experience in the cultivation of cereals. From a careful analyses of the land, the rootstocks of cuttings and clones of Sangiovese to be planted were chosen. The various forms of cultivation of vines were carefully evaluated, but it was decided to use the spurred cordon, as both the limited quantities produced and the area in which we find ourselves, require to use this type of cultivation. Among more than one hundred hectares of land in ownership of Fabio Innocenti, currently only 5.5 ha are planted with vines, for which the best areas for the production of Brunello have been selected.

The soil is clayey on average, rich in limestone, interspersed with large areas of tufa, basically thin, ideal terrain for vines grown in the middle hill, avoiding, in these areas, the presence of fog, freezing and late hoarfrost, that may occur in valleys. The ventilation is almost constantly present, to ensure a good protection against plant diseases, while minimizing pesticide treatments.
