Antonella Corda in the new oil the flavor of Sardinia

An olive oil Tonda di Cagliari in a limited edition. It is the new challenge that Antonella Corda , the young owner of the Sardinian farm of the same name that has been appreciated for the quality of the wines produced since its birth, wanted to meet in a 2020 that is anything but easy. The extra virgin comes from the olive trees owned by the company grown between Serdiana and Dolianova (Cagliari), it is made exclusively with Tonda di Cagliari olives pressed within six hours of harvesting and cold extracted . The production, very limited, is only 1500 liters . "Oil has been part of our family tradition for decades - explains Antonella Corda , owner of the company - some olive trees were already there but most of them were planted by my grandfather Antonio Argiolas. We decided to propose it now with our label because the oil and wine we produce allow those who are far away to tell and appreciate the territory in which we live, especially in a year in which moving between the various regions of Italy has become very difficult ". The twelve hectares of olive groves, now in organic conversion , include plants from 60 to over 100 years of age, cultivated with a plant density of less than one hundred units per hectare between the localities of Cuccuru Raimondo, Cuccureddus and Su Stani Saliu, in the municipality of Serdiana, and of Sa Funtana, in Dolianova. The olives, harvested from mid-October to mid-November while still green or at the beginning of veraison, are processed in a continuous cycle mill in order to keep intact all the organoleptic properties of the extra virgin olive oil and a high percentage of polyphenols. The product is then stored at a controlled temperature and, following a natural decantation, is decanted and packaged without any filtration. The Tonda di Cagliari is the typical olive of this part of Sardinia which, when cultivated and carefully processed, gives a harmonious extra virgin olive oil, medium fruity and quite sweet, with light bitter and spicy notes.
