Castigo is a sparkling wine with elegant and delicate aroma, with a fragrant hint of violet. Its flavour has a floral aromatic intensity, fragrant and persistent aftertaste with a fine perlage.
Vinification is made in soft pressing and fermentation in stainless steel at a controlled temperature (18°C).
The second fermentation takes place in autoclave for 2 months.
It goes well with fish dishes in general and light first courses, and is also perfect as an aperitif.
The recommended temperature of service is 10/12°.
