Its quality, its characteristics are the result of little everyday choices. Since you prepare the ground for the plant of cuttings to the time of bottling, nothing should be left to chance, or excessively planned. Hence the philosophy of the manufacturer, his relationship with nature on the one hand, and with technology on the other, become essential moments to understand and better enjoy wine beyond any organoleptic characteristic easily amenable to conventional parameters. Each wine of the Sant’Alda court, comes from a particular vineyard that, for its location, its variety of grapes, its age and its type of farming, was preferred over time to produce its own wine that allows us to get a clear–cut and indisputable quality. All the grapes are certified organic, are picked by hand at the moment of ripeness, sometimes forcing us to perform several steps in the vineyards. The fermentations start spontaneously (own yeasts) and occur in small conical oak vats of 40 hl, where temperatures are only partially controlled. At the end of this phase, which generally lasts 15 days, in the case of Amarone over a month, after subsequent decanting, wines, except for Soave Vigne di Mezzane, before being bottled are aged in wood of different essence, capacity and age for a period ranging from 6 months to 4 years.
