Since 2011, in the territory of Valdichiana Romana, Mario De Lisi and his wife Monica Antonini have taken over a modern cellar located in a nature reserve in Borgo Chianaiole, in the vicinity of Ficulle. They conduct vineyards in the nearby localities Sala, Santa Cristina and Olevole with the help of a qualified staff.
Mario and Monica invest in replanting old grape varieties, then giving birth to a project constantly watched by a professional association of agronomists and oenologist. They deal with the cultivation of vineyards by means of highly selective techniques aiming to a low yield of grape per hectare (30-60 hundred kilograms), reducing the use of pesticides.

Castello della Sala is located on a tuff promontory on the Umbrian Apennines (534 meters above sea level), not far from the border with Tuscany and about 18 kilometers from the historic town of Orvieto. It is beautiful medieval fortress, surrounded by ancient Etruscan towns in the hills, halfway between river Paglia and the summit of Mount Nibbio.
The estate covers a total area of 500 hectares, including 140 hectares of vineyards, planted at 200–400 meters above sea level, on a clayey soil rich in fossils from the Pliocene period of sedimentary and volcanic origin. Approximately 8 hectares are covered with olive trees for the production, for domestic use, of extra virgin olive oil.
