Tiramisu is the world's most beloved Italian dessert, having earned a place on the dessert menus of thousands of restaurants over the years and, more recently, the title of Italy's gastronomic soft power. This is according to the FIPE (Italian Federation of Public Establishments) study, which involved over 1,400 restaurants across Europe, which ranked tiramisu, along with Margherita pizza and Spritz, as the most popular product on international menus. An undisputed icon of Italian cuisine, tiramisu now has its own pairing: Dieci e Lode, the grappa from Distilleria Castagner designed to enhance the dessert's 10 aromas.
This barrique-aged grappa is the result of careful study by a team led by master distiller Roberto Castagner, who began by breaking down the sweetness to identify its main aromas. The sweet notes of vanilla and ripe apricot, typical of a barrique-aged grappa, blend with more complex notes of cocoa, roasted coffee, wood, dark chocolate, cinnamon, and pepper, along with a hint of leather and tobacco characteristic of Castagner's Riserva Cuvée 30. Overall, these notes give the Dieci e Lode grappa a unique profile that complements the sensory characteristics of tiramisu.
"Although our company boasts a range of 288 different grappas," explains Roberto Castagner, owner of the Castagner distillery , "none of them directly met my goal of creating a product capable of enhancing the aromas of both of these local specialties. We decided to highlight this dessert, which is Treviso-based like our company, and which continues to transcend national borders, increasingly establishing itself as an undisputed symbol of Italian cuisine, by honoring it at the Tiramisu World Cup. This will further contribute to the promotion of our region by creating a new tradition of regional pairing."
This pairing was actually born during the Tiramisù World Cup in Treviso, held recently, a now-established event celebrating Italy's most famous dessert, from its origins to its many interpretations. In addition to the presentation of Castagner's new grappa, the event saw Brazilian pastry chef Marcos Muzzi and Vicenza-born Ciro Tomassini triumph, respectively for best original tiramisu recipe and best creative tiramisu recipe. The combination of Dieci e Lode and tiramisu is a Treviso-specific pairing, confirming Castagner as a leading company in the sector, both locally and nationally, for over 30 years. Dedicated to showcasing the excellence of its homeland while also expanding internationally, with products ranging from classics to collector's items, including the Mixology line, which has won over 40 countries worldwide.
Tiramisu World Cup organizer Francesco Redi : " It's crucial for us to find partners who bring added value to the event in terms of creativity, quality, and connection to the local area. Roberto Castagner, with his grappa, has created something that wasn't there before and has managed to unite two deeply rooted traditions in the Treviso area: on the one hand, the passion for tiramisu as a "homemade" dessert and, on the other, grappa as a finishing touch. We hope to help him promote this pairing as a "new classic" of Treviso."
