The round table organized by Bortolomiol as part of the Milan Wine Week ended with a proposal for the future.

Organic production is a starting point , not an end point. It is with this reflection that the conference "From environmental certification to global certification: environment, ethics and beauty. The path of Bortolomiol as a sustainable model", organized by Bortolomiol, historic winery of Conegliano Valdobbiadene Prosecco Superiore Docg, as part of the Milan Wine Week.

Many food for thought emerged during the meeting, moderated by the manager and author Sebastiano Zanolli. Among all the idea of Elvira Bortolomiol, vice president, to work on an environmental and social certification that involves all the parts of an entire system, from the cellars to the individual inhabitants. For years Bortolomiol has been committed to making production more and more in harmony with the environment. Proof of this is the recognition of the Environmental Product Declaration (EPD-Environmental Product Declaration), the only environmental quality certification currently valid internationally (ISO 14025), and Bortolomiol was the first winery to obtain. To explain the characteristics of this certification were Riccardo Maria Pulselli and Elena Neri, respectively founding partner and CEO of Indaco2, a spin off company of the University of Siena that accompanied Bortolomiol in obtaining the certification that analyzes the cycle of the product from the vineyard to the chalice, from the harvest to the disposal of the bottle. The EPD certification obtained by Bortolomiol for now concerns the Valdobbiadene Prosecco Superiore DOCG Millesimato Biologico Brut IUS Naturae, which produces 1.54 kg of Co2 per bottle, or 22% less than the international average. << After this important milestone, our path continues and will involve the certification of the entire company. This recognition is the start of a journey that involves the entire territory. Only thanks to everyone's commitment will we be able to achieve true sustainability, which from environmental becomes social and therefore global. >> Says Elvira Bortolomiol.

Ada Rosa Balzan, creator of the first algorithm that certifies companies based on international parameters of environmental, governance and social sustainability, spoke about the importance of sustainability as a 360-degree concept. Balzan also highlighted how the companies that have a greater propensity abroad and that are led by women are the ones that first moved in terms of sustainability. The idea of Roberto Cipresso, an internationally known winemaker, is innovative, expressing the hope that, just as the economic balance sheets of the companies are in the public domain, the same happens also for the sustainability balance of the wineries .

The meeting was concluded by the art popularizer Francesca Cavallin, who recalled how the word sustainability was formulated, for the first time, in 1972 to indicate the impossibility for the world to produce infinite resources in a planet that presents limited resources. He also recalled how art has always had a close link with nature.
