An original and unconventional format to promote and disseminate the peculiarities of the wines of the Marches through the key to understanding the combination with traditional Italian dishes. This is the focus of "Autoctoni Gourmet" , an event organized by the Chamber of Commerce of the Marches for the Consorzio dei Vini Piceni in collaboration with the LINFA Special Company.
The first edition of the format took place in recent days in San Benedetto del Tronto and saw the participation of food and wine journalists, influencers and bloggers, all busy in the kitchen of the Harena Chef Academy to reproduce a dish created by chef Arcangelo Tinari (Villa restaurant Maiella – One Michelin star), to be combined, in this case, with the main white wine of the Piceno area, the Offida Pecorino Docg. In fact, the goal was to bring out the organoleptic qualities and typicality of this white through the combination with a signature dish of Italian cuisine
Chiara Giannotti, Giambattista Marchetto, Giuseppe Garozzo Quirini, Roberta Castrichella, Elisa Dublyanska and Stefano Quaglierni challenged each other in the preparation of Risotto with pecorino and endive fondue on turnip cream by chef Tinari. These "cooks for a day" were assisted by six students from the De Panfilis Hotel Institute of Roccaraso who thus had the opportunity to explore the excellent characteristics of the wines of the Marche region as future operators in the Ho.Re.Ca. sector.
Marking the times of this challenge was Tinto , voice of the Decanter broadcast on Rai Radio 2, while judging the individual preparations were Leonardo Romanelli, journalist and food and wine critic, Alberto Cauzzi, director of Passione Gourmet magazine, Giorgio Savini, president of the Consorzio Vini Piceni, and finally the chef Arcangelo Tinari . For the record, it was Giambattista Marchetto, with the help of the student Angela Aniello, who won the challenge in the kitchen and was able to best enhance the peculiarities of Offida Pecorino Docg in combination with the dish.
" Autoctoni Gourmet - declares Giorgio Sabatini, president of the Chamber of Commerce of the Marches - is a new format on which we have bet with enthusiasm and confidence, because it has led experts, sector popularizers and digital content creators to explore one of the many excellences that are born in this territory. The goal is to give a seriality to this format by highlighting, edition after edition, all the wines that are born in our region. The activity fits in the wake of those that Camera Marche carries out for the agri-food sector, a strategic sector for the Marches where it has over 26,000 companies and which contributes significantly to the excellent export performance. In the first nine months of 2022 we exported food and wine products for a value of 405.4 million euros , 22% more than a year ago".
" My thanks go to the Chamber of Commerce of the Marches which has given us a new opportunity to enhance the most widespread DOCG of the Marches, the Offida, in the Pecorino type - declares Giorgio Savini, President of the Consorzio di Tutela Vini . Autoctoni Gourmet was a showcase that has allowed us to highlight the excellence of our native vine, which has confirmed the judgment of many experts who define it as a red dressed as white".
" Autochthonous Gourmet – says Simone Mariani President of LINFA, the Marche Chamber of Commerce Special Agribusiness Company – is a new way of promoting and informing that we intend to exploit for the planning of our future actions. We are convinced that through this type of format above all by exploiting the potential of all communication channels we can intercept the attention of the Z generations, connecting them with our territory of origin".
Focus Pecorino Offida DOCG
In 2021 the production of Offida Pecorino Docg was 1 million and 725 thousand bottles.
The production area is located in the southern part of the Marche between the provinces of Ascoli Piceno and Fermo, in the area that goes from the coast to the medium-high hills. The altitude of the cultivated vineyards is between 50 and 650 m. asl.
We owe it to Guido Cocci Grifoni, one of the first winemakers of the Piceno area, for the intuition of enhancing the potential of Pecorino in the 90s, a vine capable of giving rise to a white wine with great personality, not surprisingly defined as "a red dressed in white". In 2011, with the passage of the Offida denomination to DOCG, Pecorino became one of the great protagonists of the production of white wines present in Italy.
In the current production there is a wide interpretative differentiation in which each company has found its own expressive balance by condensing the best of its research on the vine. If acidity, which gives longevity, and body are common values, despite the obvious fluctuations linked to the vintages, the aromatic aspect is that of
