“We have always promoted the culture of wine, and now even more so – explains Gianpaolo Breda , President of AIS Veneto – by accompanying our students in conscious and responsible consumption. Learning to taste carefully means enhancing our food and wine products: knowing wine means spreading a positive message that is against excessive use”.

The educational proposal, which includes 32 courses distributed in over 20 locations in the region starting between January and March, has been completely renewed and enriched by an in-depth study dedicated to oil. Of the 32 courses scheduled, 17 are first level, a fact that confirms the growing interest in the world of wine and food and wine culture.

“To train new Sommeliers, it is essential to provide up-to-date and reliable tools to interpret the world of wine,” Breda continues. “The textbooks have therefore been completely updated , integrating the most recent data on denominations, legislative innovations and other key aspects of the sector. Furthermore, the technical language of the tasting sheet has been revised to ensure greater precision. Future Sommeliers will thus have the tools to understand the complex world of wine, identify its peculiarities and share technical and objective opinions with the community of tasters, from enthusiasts to industry professionals.”

The first level represents the introduction to the profession of Sommelier and provides the basics of viticulture, oenology and service. Among the topics covered are the correct serving temperature, the organization of the cellar and the regulations of wine. There are also lessons on beers and spirits, always accompanied by practical tests with the tasting sheet.

The second level delves into the connection between wine and territory, analyzing the main Italian and foreign wine-growing areas and discovering how geography, climate and the hand of man influence each bottle. This module aims to perfect the tasting technique to appreciate every nuance of wine and formulate professional and objective judgments with the introduction of the scorecard.

In the third level , attention is focused on food and wine pairing. Through practical tasting tests, students learn how to enhance the characteristics of wine in combination with different dishes and culinary preparations. At the end of the training course, participants will be able to take the exam to obtain the title of AIS Sommelier.

In addition to the courses to become a Sommelier, AIS Veneto also offers Olio, it's time to get to know it , a new course dedicated to extra virgin olive oil that explores the technical and agronomic aspects of its production, analyzing its diffusion at regional, national and international level. In 15 lessons, the course provides the necessary tools to recognize the quality of the product with the presentation of the AIS method for tasting oil and the scorecard to evaluate its characteristics. The final part of the course focuses on pairing with food, exploring gastronomic trends, historical-cultural aspects and the nutraceutical properties of extra virgin olive oil.
