Our idea of cooking is rooted in local tradition with great attention to meats with culatello produced by us, with the great hams of Piero Montali, the last artisan of ham, which we age for three years, the salami of Angelo Minozzi and coppa of Piacenza.
Pasta is completely homemade by Mrs. Franca, who was the pasta maker of the great Peppino Cantarelli.
Much attention is devoted to the preparation of bread and bread sticks that are baked every day.
We do our best in the pursuit of raw materials, from the most valuable meats up to farmyard animals, that we take from farmers friends. Per the most demanding ones, 5 or 6 proposals of exclusively fresh fish and "seafood" that we interpret with lightness and fantasy.

The kitchen of Piera, cook for family vocation,
is a cuisine created and tested "in the house", four and more hands tied to the land, traditional with interpretations,
with the insertion of dishes and regional
scents which focuses on the seasonality, the quality of raw materials,
and with Licia and Lucilla, innovative forces full of fantasy.
Pasta is the prerogative of Stefano, Sfoglino and Sommelier.
Desserts are entrusted to the creativity of Fabrizio, jack of all trades and Sommelier.
La Fonderia, Osteria Da Gas, has been cheering spirits and palates since 2004, feeding on the vast experience of Gastone and his daughter Silla. After the success of the "Pannocchia" of Calisese and the "Cittadella" of Montiano, Gastone proposes again special atmospheres and a kitchen where tradition is refined! In addition to the famous "porcellona", a full table of meats, croutons and fried vegetables, they offer all the freshness of hand–made pasta, excellent second courses of meat, the result of a careful selection that favors local companies, as well as Fiorentina and fillet of the neighboring Tuscany. Moreover, next to the delicious roasts, pork meat, bourguignon and fondue, you will find a lightest kitchen, vegetarian and healthy menus, steam cooked vegetables and fresh fish on the Adriatic. In the dining room, the tables, all different, are made of decorated stone, and among the furnishings you can admire some antiques, some "goodies" that tell our tradition and our culinary history ... surrounded by a bright, elegant and welcoming porch for those hot summer nights!
The pride of Osteria La Fonderia remains always the welcoming and the friendly atmosphere that Gas and Silla succeed in offering to their guests.
The cuisine is based strictly on the use of fresh vegetables, homemade pasta, meat and products of our territory. You can enjoy special starters of the house, battilarda of tasty croutons with vegetables, appetizer "of the Sailor", sardines, clams and fresh fish of the Adriatic Sea. Among the hand–made pasta dishes, highly appreciated are: Pappardelle with duck, Ravioli with ricotta cheese and potatoes Raviolacci with seasonal vegetables. In the winter the scents of the forest, truffles and pore mushrooms triumph: Tagliatelle with pore mushrooms and Passatelli with truffle are highly demanded.
The most famous second course is "Baston de Passador", sirloin on cherry wood, with a smoked bacon stick, cooked on the grill. Other specialties: piglet cooked on roaster, broiled cockerel, roasted knuckle of veal and Scortichino of fillet with balsamic vinegar.
Among the desserts, made strictly in the house, our flagships are the puff pastry with mascarpone and strawberry sauce, ricotta pie and creme brulee.
The kitchen also offers menus of fish, vegetarian menu, full of vegetables cooked on the grill, in the oven, or steamed, appetizing fondue and bourguignon, pasta and beans, and onion soup.
OUR WINE CELLAR
The wine list of La Fonderia has 40 labels that represent very well the excellence of the Romagna territory, from five of the best wineries. Good is the proposal for white wines of Trentino and Southern Italy, rigorously selected by Gas.
The interiors of “Da Fioroni” Restaurant, completely renovated and enlarged, were entrusted to the best architects, who designed an elegant and comfortable environment. The halls can welcome many guests, offering an airy, very modern and elegant atmosphere.
The kitchen, supervised and headed by our wonderful chefs, revisits dishes of the traditional cuisine and not only, offering them in a contemporary key, combining flavours and playing with contrasts. For many years we have satisfied the palate of Italians and foreigners.
In Galeatasi you find the Osteria of Via Zannetti, in the street of the same name reminding the doctor Ferdinando Zannetti, known because he cured Garibaldi after his injury in Aspromonte. The restaurant is nice and cozy, and since 2007 serves typical of Romagna flavors, finely revisited by the inspiration of Marco, the Chef belonging to the Italian Cooks Federation.
The love of food led him to combine tradition with innovation revisiting recipes of Romagna with imagination and taste, always favoring ingredients and local products also reported by Slow Food (salt of Cervia, Mora Romagnola, Razza Bovina Romagnola I.G.P., Brisighella oil D.O.P., and much more). To us, seasonality is important, as we offer various menus according to the natural periodic availability of the best food.
The restaurant was founded in 1973 from an idea of Caterina and her husband Giovanni arrived in Romagna from the Marche region. He was a trucker, with great love for gastronomy, she was a seasonal worker, to continue and consolidate her expertise together chasing the passion for cooking with the idea of a cozy restaurant with the simplicity, the genuineness and the flavor of traditional dishes that could remember the heat really giving the feeling of being at home. Currently, Caterina is helped by her daughter Lucia, her grandson Andrew and his wife Cristina. Even today, the kitchen, refined over time, has never lost its tradional connotation exclusively offering all the excellences of the rich and varied culinary traditions of Romagna.
