Food and wine have all their noble prehistory: they were born with the first dreams of men and will die with them. To say that Gadda was a greedy, or that Carlo Bo would do anything for a plate of “All’Uccelletto” beans, or to tell that Tommaso Landolfi was a fine connoisseur of wines, to remember that Prezzolini, coming in Florence, wanted to stop at Antico Fattore to give to the owner Giulio a copy of his book “Storia della Pastasciutta”, may appear unimportant notes, made for folklore, prepared for avid readers. But Antico Fattore was and is still today a school for fine palates. It has been honored with many gastronomic recognitions with its famous Rigaglie with sage or its meat and artichoke rolls that have come so far, together with the Florentine tripe, of origins that are even more ancient than the ones of Uffizi.
