This is a Sicilian white wine of the Lipari Island, a very natural product, a gift of the land and the sea. At the nose you can smell a strong note of minerals and of white flowers. In the mouth, obviously, is a little bit salty but never annoying. On the contrary, the mineral taste gives a fine acidity that makes you feel its origins from a volcanic land... HARVEST: manual with selection of the grapes at harvest. VINIFICATION: direct pressing of the grapes in a pneumatic press. No clarification of musts, only settling to 16°C, fermentation to about 20°C in stainless steel tanks (Malvasia) and barriques 3/4 steps (Carricante) with batonnage and permanence on the yeasts for about 6 months. Repeated decanting for natural clarification and bottling of the wine. AGING IN BOTTLE: 2 months. ESTIMATED CAPACITY OF AGING: at least 4/5 years. SERVING TEMPERATURE: 12°C
