Of gentle scents of vanilla, apple, almond and honey with hints of spices, the Cimaio is a wine made from Verdicchio grapes in single-variety vinification and persistent flavour, with enveloping structure, soft and warm. And with a peculiarity: grapes are harvested in late November in an advanced state of maturity, when they are attacked and covered in noble mould, a characteristic that gives those peculiar mineral notes, bitter but round and savoury. Long and meticulous is the process of vinification: the must is fermented in noble wooden barrels, toasted, and the product obtained is aged in the cellar for a long time, leading it into the market only after 24-30 months after harvesting. ORGANOLEPTIC NOTES: Colour - Yellow with golden glares. Aroma - It expresses sweet hints of vanilla followed by notes of ripe quince, honey, ripe loquats, yellow plums, almond and spice hints, very persistent. Taste - In the mouth shows its great structure, enveloping, soft, warm, the fruity notes of the aroma can be recognized. Mineral, savory. Very persistent. Serving suggestions: excellent with every fresh or aged cheese, more or less spicy, cheese of the pit, blue cheese, Gorgonzola, or with very important dishes, very tasty, first courses with cheese, great fish dishes, such as cod, fish soup, with foie gras. Excellent and very pleasant at the end of the evening, for meditation, relaxation. Serving temperature: 14C.
