Wine: harmonious and gentle but also strong and vigorous, with complexity, elegance and austerity. Already within a few months after bottling it reveals its greatness, that increases gradually as soon as the floral scents of youth give way to ethereal aromas of spices, chocolate and truffle.
Vinification: the grapes harvested in baskets of 20 kilos are selected manually on a special "table". The fermentation is with floating cap, with only original yeast, without additives. Utmost care between pumping over and wine–crushing for 10/15 days, following further maceration for about a week, then malolactic fermentation is started only with the help of a slight increase in temperature of the drained wine.
The aging is in oak barrels of at least 300 liters for 12 months, and in barrels of 25 hl for further 12 months. The transfers are minimized (2 per year).
