The estate has been belonging to the same family for generations. The only one heir and current owner is Marco Carpineti, who, in 1986, driven by the desire to live in the nature, decided to move exclusively, and in first person, in the farming company owned by his family, with the aim of changing its production philosophy. In effect, he began to transform the methods of grape production and to market the wines obtained. The most significant change was undoubtedly the adoption, in 1994, of the methods of organic farming, fruit of the desire to create really healthy products. In 1997, after the three years required for the conversion, the company was recognized as Organic by the institute of control of Soil and Health with corporate code recognition IT ASS 2368 and has been working for more than 14 years in strict compliance with the Community rules on organic farming. For the care of the plants and the processing of raw materials, in effect, herbicides, chemical fertilizers and synthetic products are not used. To better respect the environment and for a more high–quality product, in most of the estate works on the soil are not carried out, but weeds are kept under control through repeated mowings. The company currently consists of approximately 52.5 acres of property, of which more or less 41 cultivated with vineyards, and 11.5 with olive groves. It is situated at an altitude ranging from 200 to 450 meters above sea level in the locality of Cape Le Mole, Casale, Pezze di Ninfa and SAN PIETRO in the town of Cori, an ancient town in Lazio dating back to the fourth century BC which is located south of Rome. The area, situated on the slopes of the Lepine mountains facing south–west, has a cool climate in summer and mild in winter, very favorable to the cultivation of vines and olive trees. The soil is of volcanic origin, is rich in structure, particularly tuff, in the lowest part, hence the name of one of the Hills: Tufaliccio, while in the highest part it has a constituent calcareous skeleton. In Capo Le Mole vineyards grow on five other hills, besides the already mentioned Tufaliccio: Collesanti, Colle Paolino, Vignale della Selva, Costa Filippani and Casa Vecchia. In Pezze di Ninfa locality there is a unique plot, lying on the side of the mountain, with a very strong slope and rich in limestone, that is currently being renovated. In San Pietro locality the vineyards stretch over volcanic soils with gentle slopes. The white grape varieties grown have always been: Bellone, Arciprete Bianco (Bellone biotype), Malvasia Puntinata, Trebbiano and two varieties of Greco grapes, known locally as Moro and Giallo, almost disappeared in the area. Those with red berries are: Nero Buono di Cori, Montepulciano, Cesanese and Sangiovese. The vines are for 30% over 25 years old, 50% about 10 years old and for the rest 5 years old, on average. The density of plants per hectare varies from 1,300, for the oldest vineyards, to 5,000, for the most recent ones.

The new winery, almost completed, appropriate to the company’s growing needs, at the moment is booming. Now, there is substantial space for processing, storage, fining and maturation of the product, as well as for the reception of guests and tastings. The inclusion in the production phase of cutting–edge technologies and new wooden barrels of different sizes are giving significant results.

The olive groves in the locality of Capo Le Mole with an extension of 9 hectares and in the locality of Casale with 2.5 hectares, are made from ancient plants of the Itrana variety. From the produced olives we get, through cold extraction, Extra Virgin Olive Oil, certified as Organic, too.
