The total investment will be over 200 million euros, of which approximately 60 million have already been spent for the acquisition of the estate which took place in 2001, for the purchase of other land, farmhouses and a village, for the construction of the new cellar and for the uprooting and planting of the vines.
What will arise from this ancient village, the film set of famous films such as The Night of San Lorenzo by the Taviani Brothers, will be a widespread hotel with suites and private services, including a swimming pool and chef.
The structure will offer different types of restaurants, from the starred restaurant to the tavern where you can taste local specialities, and of course experiential tourism.
With the last two acquisitions, namely the neighboring San Gervasio, 375 hectares consisting of a small ancient village, rural buildings, warehouses, cellar, approximately fifteen hectares of vineyards, around thirty hectares of olive groves, numerous woods, orchards and arable land, and Montefoscoli, 300 hectares of vineyards, fields, woods and farmhouses, Villa Saletta has gone from just over 750 hectares to 1413 hectares in the last year.
Inside the farm you will encounter wine, arable land, aromatic herbs, an ancient tobacconist, woods, poplar groves, olive groves, truffle groves, hospitality villas, farmhouses and two ancient villages: Villa Saletta and San Gervasio .
The next step will be the start of works for the construction of the new cellar , which involves the recovery of an existing surface area of 1100 m2 belonging to an old building not far from the current cellar, and additional production spaces, all intended for reception, to catering and wine club members. The area dedicated to winemaking, completely underground , will cover more than 3500 m2.
Villa Saletta is directed by the administrator and technical director David Landini.
Currently there are 40 hectares of vineyards with the aim of reaching a maximum of 90 in 10 years. Sangiovese, Cabernet Franc, Cabernet Sauvignon, Merlot and other grapes are grown here. From them are born a classic method sparkling wine from Sangiovese, a rosé from Sangiovese, Merlot, Cabernet Franc and Cabernet Sauvignon, a Chianti Superiore and four IGT Toscana reds.
