On November 28th , in the elegant rooms of the Castello Monaci Resort, producers, winemakers, sommeliers, professionals and enthusiasts transformed the day into a true stage of emotion, enthusiasm and sharing. Various categories were awarded within the Vinoway Selection 2026, to celebrate the work and dedication of those who give life to Italian wine and, among these, also that for the “ Italian Method ” where Follador Prosecco dal 1769 stood out.

In this context, the Nani dei Berti Brut Millesimato DOCG Prosecco Superiore Valdobbiadene 2024 sparkling wine from the Follador winery stands out for its harmonious and refined character and its ability to transport those who taste it to the hills of Valdobbiadene, amidst aromas, nuances, and sensations that speak of a vibrant and surprising territory.

In the Conegliano Valdobbiadene wine scene, where tradition is often the primary calling card, Follador Prosecco has stood out since 1769 for its boldly personal approach, the fruit of research, intuition, and a desire to reinvent itself while remaining faithful to the essence of the terroir. At the heart of this vision is the Metodo Gianfranco Follador® , a registered technical protocol that represents much more than a production process: it is the evolved synthesis of agricultural, oenological, and cultural thinking, created to preserve the integrity of the fruit and restore the grape's original purity to the glass.

The insight was born from a concrete experience shared by Francesca Follador , the winery's enologist, and her brother Michele , the company's technical and design mind, during an intensive course in Montpellier. During that week of discussions, immersed in laboratories and diverse production models, an increasingly pressing issue emerged clearly: rising temperatures were compromising the aromatic stability of the must, necessitating a profound rethink of several stages of winemaking. It wasn't enough to intervene downstream, during the second fermentation phase: it was necessary to act immediately, right at the moment of pressing, when the grapes are most alive and vulnerable.

This need sparked a technical research process that also involved specialized cryogenic gas suppliers. After several tests with experimental equipment, a system was developed that could drastically reduce premature oxidation of the crushed grapes: the first step is temperature-controlled, in the absence of oxygen, to prevent the onset of reactions that damage freshness and aromatic complexity. This is followed by a gentle cryomaceration, during which the skins remain in contact with the must for a very brief but strategic time: just enough to extract structure, minerality, aromatic precursors, and everything else nature can offer. The third key step is extended aging in an autoclave, well beyond the minimum time required by the Charmat method, which allows for a longer and finer secondary fermentation, giving the wines elegant perlage, a creamy texture, and greater depth on the palate.

These three steps are complemented by several internal, confidential processes that complement the Metodo's originality and preserve its distinctive character. The result is a recognizable style, characterized by exceptionally clean flavors, natural balance, and distinct yet never overpowering aromas, capable of expressing the terroir with a modern and respectful voice. The winery's entire production—from Crus like Torri di Credazzo, a pure expression of the estate's most iconic hill, to zero-dosage cuvées like XZERO, now among the most highly regarded even abroad—is made using this method, which today represents one of the brand's most recognizable signatures.

But more than a technical method, the Gianfranco Follador® Method is a declaration of identity. It is the desire to assert, with discretion and determination, a substantial difference from the Prosecco narrative, thanks to a range of distinctive, complex, and refined sparkling wines, capable of combining the pleasure of drinking with the culture of making.
