The sea of Porto Cesareo, one of the most beautiful marine reserves in Italy, has welcomed the bottles and will take care of them for 12 months at -30 m , will shelter them from the light and from the influence of the lunar phases, will cradle them with wavy movements and will sculpt with marine molecules.

The project of the underwater cellar, for Paololeo, has a particular value because it is intrinsically linked to two aspects that the company holds particularly dear: sustainability and wine experimentation . Certified Equalitas since 2021, it annually publishes its sustainability report in addition to its Code of Ethics. The project of the underwater cellar was in fact conceived with a view to energy saving, because it does not require refrigeration and pallet handling systems as nature already offers everything necessary. << To understand the benefit in terms of energy savings, we will conduct an experiment together with the Porto Cesareo Marine Protected Area. – Says the oenologist Nicola Leo. – Furthermore, the decision to refine the bottles at sea is driven by the desire to challenge the thousand potentials of the wine and demonstrate its great versatility thanks to the enhancement of two Apulian native varieties to be rediscovered, which will meet the clear Salento sea creating a perfect synergy > > . It will be 12 months of continuous study and discovery, thanks to monthly samplings, of what will happen in the depths of the sea.

This project was born in 2018 at the behest of the company's oenologist, Nicola Leo, and after years of research it has materialized today with the launch of the bottles .
