Grignolino

a native vine of the hills between Asti and Casale Monferrato, where even today the area of ​​choice is located. The name may derive either from the dialect term grignola, indicating seeds, particularly present in this grape, or the dialect verb grign, gnashing, because of the sour taste that makes teeth grinding. One of the main aspects of this variety is the great quantity of hard tannins, consequence precisely of the high number of seeds, which contrasts with the transparent color and the not very incisive wine structure, that causes difficulties in winemaking. In addition, the Grignolino wine often struggles to mature and has evident differences from log to log, if not from cluster to cluster.
