“Porca Vacca” is not a bad word, but a strong expression that has its roots in our history, and even in mythology. No offense, therefore, if we use terms that define in the ancient popular language the female of the pig and the one of the bull. Balanced between the past and the future, the logo–icon of our venue draws from affective memory evoked by the typical farmyard animals, a stylized cow with the form of good wishes that resembles a horseshoe. An ancestral symbol of fertility, present in all the mythologies of ancient civilizations, from Pasiphae to the Heifer of Homer, in the rural traditions and in poetry, until the illusory corruption of the term, which became an irreverent and never vulgar saying. An innocent mockery to not take yourself too seriously and lightly throw a message of hope that finally the era of lean cows is about to end.

The idea is that of an innovative and traditional at the same time restaurant, founded just like a game from a conversation between friends, who founded the QUEI BRAVI RAGAZZI SRL company (comsisting of Daniele Orlando, Francesco Curti, Massimo Samarati and Andrea Chiriatti, chef of Porca Vacca), it has taken shape in the new space of Lavater square. The gastronomic spirit of Porca Vacca is an evolution of the original Italian cuisine. Italian DOP products like cheese and cold meats, from local productions of the areas of origin, but also by large producers of international recognition, such as the Pata Negra and Serrano ham. The meat, strictly from Argentina and Tuscany, are served with a selection of oils that represent the flavor and quality of Italian taste in the world, such as Laudemio Count Guicciardini and Viola PDO Colleruita. Homemade pasta and bread with buckwheat, bran flour. The wine list, created in collaboration with the sommelier Francesco Schiavone, includes native Italian wines from specific grape varieties such as Morellino di Scansano, Tignanello Sassicaia, Barbaresco di Gaia, Compagnoni Francia Corta, Inama, Tocai rosso, Schioppettino, Terre di Giumara etc...
