A technological “nose”, to say, an electronic sensor to prevent wine from smelling like cork. This is in process in the European project coordinated by the University of Tor Vergata
«The so–called problem of wine that “smells like cork” – Francesca Dini, of the Department of Chemistry of Tor Vergata, explained – is due to the contamination of the cork by a particular type of mold. These organisms, in effect, release a chemical substance that entering into contact with wine changes its characteristics by giving it an unpleasant taste (...) we are trying to create a device that can check a few moments before bottling if the cork is contaminated».
