Reserarch of Pisa reveals the ranking of the right glasses for red wine

A survey of the University of Pisa has compiled a real list of the best glasses of red.


The study, funded by a leader industry, the Bormioli Rocco & Sons, was created by a group of food technologists of the Department for Agricultural, Food and Agro–environmental Sciences.

The survey was published in "Cyta: Journal of Food" and was based on sensory evaluation, chemical and physical analysis and morphological characterization of the glasses.

«We tested six types of glasses of the Premium line with a "structured red" wine – Francesca Venturi, one of the coordinators of the University, said – and the best result is a truncated cone type model, while the black jersey has gone to what we commonly call "big ballon" and to the standard tasting glass, ISO type, of smaller in size, which was penalized mainly because of its poor ability to promote interaction between environment and wine tasting».

«Despite the glass is the means by which wine communicates with the wine taster – Venturi said – the scientific information able to highlight the ways in which this interaction takes place is scarce. Therefore, even today, the choice of a cup is substantially related to the practice or the visual impact of the glass, without regard to the definition of the organoleptic profile of the product contained in it, even when its cost of purchase achieves remarkable amounts».
