Excellences Campane arrives the Festival of frying and Neapolitan timpaneria

An appointment between taste, history and live music, where tradition and Bourbon culture meet contemporary Neapolitan cuisine

After the recent success of the Festa della Mozzarella di Bufala, Excellences Campane and Verace Sudd present the Festa della friggitoria and Neapolitan timpaneria , which will be held on Friday 18 September at the Via Brin venue in Naples.

It will be an evening to discover the secrets of the ancient art of fried food: from 8.00 pm there will be a meeting with the fryer of Campania's "I Dottori del Fritto" , which will tell the story and the ancient techniques of frying and tympanery, dating back to Bourbon Naples, and street food, emblem of the Campania and Neapolitan taste.

As real "doctors" of fried food, chefs Antonio Esposito and Ciro Leone , pupils of the great master Antonio Tubelli, will perform in the open kitchen where they will express the best of their dishes, from a carefully selected choice of strictly seasonal and local raw materials. A cuisine made of quality, tradition and contamination of the gastronomic treasure of the fathers of Neapolitan cuisine, the historic "Monzù", as the professional chefs of the time were called.

The delicacies will make up a three-course menu: appetizer, traditional first course and dessert. The rich appetizer will consist of the coppetiello of street food, strictly artisanal: pumpkin flower stuffed with Agerola provolone and buffalo ricotta, omelette, arancino, polenta flakes with cured meats and Irpini cheeses, street croquettes, mozzarella in carrozza, zeppoline and potato chips. Following a first of the tradition, the tympanum of standing paccheri alla sorrentina. A dish considered the ancestor of cannelloni, composed of paccheri with internal ribs produced by master pasta makers of Campania Excellence, 'E Sarracin, stuffed with buffalo ricotta, San Marzano tomato, red spotted cheese, Agerola fior di latte and basil.

Finally, a skewer of staples with milk chocolate sauce will be served as a dessert.

All will be accompanied by the splendid voice of Miriam James , with a selection of twentieth-century Neapolitan songs, rearranged in a neo-soul key.
