Marco Martini, cook from Rome, won the Emerging Chef of Central Italy 2013 Award.
«I am proud to be the first from Rome to win this competition» Marco Martini explains, cook of the restaurant Stazione di Posta in Rome «The first day I passed the challenge with the chef from Lazio, and brought a dish with Aringa all'Arrabbiata and my chicken steamed Ravioli with broth of roasted potatoes».
«In all my competitions I have always tried to carry my own thought: to prepare dishes linked to tradition and memory, that should be able to represent me. I chose Chinotto sweetbread and carrots and my Alla Diavola chicken: this was an achievement! It has been a good experience: but now I feel as before: tomorrow I will start working at the restaurant as always, with reliability and dedication. The world of restaurants is a hard world, and it is from these experiences that you understand that sacrifices are rewarded. I want to dedicate this victory to myself, to sacrifice, to the will and most of all to the reliability that I employed to face some situations in my life».
