The new Pinot Bianco Brut Nature from Cantina Mirabella is officially available on the market. 4,000 bottles of the grape variety have been produced: a new interpretation of the Cellar of undosed wine, more immediate and fresh than the other two wines without added sugar, the DØM Riserva and the DØM Riserva Rosé . The Pinot Bianco Metodo Classico was made in a limited edition for the 40th anniversary of the winery, celebrated in 2019, but it is only in 2020 and with the new champagnotta bottle that Pinot Bianco Brut Nature definitively enters the Mirabella line. For the occasion, a new exclusive flat-format packaging was developed, designed to pave the way for all future packs of the company, with less use of paper given the absence of the die. Pinot Bianco Brut Nature involves a manual harvest of only perfectly ripe and healthy bunches, the first to be harvested for the early and rapid ripening of the grape. For the vinification we proceed with a soft pressing and a first fermentation with selected yeast at a controlled temperature of 16-18 ° C in cement tanks . The aging is at least 24 months on the lees in the bottle and 3 months after disgorgement. “White fruit on a cloud of talc, where hawthorn petals chase each other. The softness of a lukewarm sponge cake that plays with grains of salt in the mouth ", describes its sensorial profile Alessandro Schiavi, the company's oenologist. In Franciacorta 88 hectares of Pinot Blanc are grown, which corresponds to 2.9% of the entire area under vines. Of these, Mirabella owns 10% of the land , making it one of the first realities for the cultivation of the vine in the area. A production niche that constitutes an identity representation of the territory, despite the fact that Pinot Blanc in purity does not fall within the Franciacorta specification. The Brescia winery follows the Pinot road with increasing determination, with the desire to strengthen the link with the origins: in the late 1960s, in fact, the denomination was called Pinot di Franciacorta DOC, made from Pinot Blanc grapes with the possibility of additions of Pinot Gris and Pinot Noir. In April 2020 Mirabella planted two new hectares of vineyards , one planted with Pinot Blanc and one with Pinot Noir. A decision that falls within a broader design, which will see the launch on the market of two new still wines starting from the end of June 2020, a pure Pinot Blanc and a pure Pinot Noir , characterized by freshness, immediacy and typicality. Vintage 2019 for both which marked great performances of the pinot wines, so much so that the winery decided to vintage the Franciacorta wines.
