AQUA CRUA wins the VILLA SPARKLING MENÙ Award by Villa Fraciacorta

Giuliano Baldessari is the winner of the Villa Sparkling Menu 2015 Award, the biennial food and wine competition conceived by Villa Franciacorta in 2001 to promote the versatility throughout the meal of their vintage wines in combination with the signature cuisine. On 20th September the finalists challenged each other: Ristorante Aqua Crua (Barbarano Vicentino, VI) – chef Giuliano Baldessari, Castello di Casiglio (Erba, CO) – chef Carmelo Sciarrabba, Castello Malvezzi (Brescia, BS) – chef Alberto Riboldi, Metamorphosis Restaurant (Lugano, Switzerland) – chef Luca Bellanca and San Rocco Restaurant (Verteneglio, Istria) – chef Teo Fernetich. Baldessari has emerged with Aqua Cotta, a dish that is a meeting point between East and West, where garusoli cream is enclosed in seaweed sea lettuce, before being steamed and served with a little butter, in the broth of morels and raw prawns. Baldessari has been included in the gold register of the event, which saw in the past illustrious names like Enrico Bartolini, Emanuele Scarello and Morgan Pasqual.
