The places are those of the Val Zoldana in the Belluno area, a territory of environmental and landscape excellence but also gastronomic, a territory marked by the majestic presence of the Dolomites.

The people are his father, Giovanni Carlo Sacchet , founder with Zacchaeus of Carpineto at the end of the sixties, today a noble Tuscan company signed by the great reds, still of the two friendly families, and the brothers Votta, Alessandro and Fabrizio , patron of the restaurant La Tana de 'l Ors di Val di Zoldo with chef Nicola Campus . Winemaker by vocation Giovanni Carlo Sacchet , in love with Tuscany but originally from this land, Castellavazzo a stone's throw from Longarone .

La Tana, a mountain restaurant, or rather a mountain house, the cradle of a warm and sincere welcome, polite and intimate, which Sacchet loved very much and frequented in his frequent escapes from Tuscany to reach the mountain.

"Yes, because the bond with his land - Caterina recalls - has always been very intense, so much so that we also transmit it very strongly to us daughters who were born in Tuscany. My sister and I always continue to frequent those places, as soon as we can we run away on, especially in Valzoldana. I have repeatedly thought that my life may one day be in the mountains. "

Walks, trekking on the peaks, most often skiing, all ended up at the table for Giancarlo Sacchet, and very often right in La Tana . And then it was a long chat tasting the matching wines, wines of the area he loved very much, he graduated as a winemaker at the Conegliano school of enology. But also the wines made by him, who in 1994 won the title of best winemaker of the year of IWSC, for which Alessandro and Fabrizio, but above all the chef, also sommelier, have always had a passion. A happy synthesis of excellent raw materials exclusively from the territory with a view to sustainable cuisine in harmony with sustainable tourism and a strong identity, and a wine chosen in a refined limited production, often counted among the wine masterpieces.

The Cabernet Sauvignon F arnito 2015. 2015 was a splendid vintage, which gave rise to a wine of great quality and harmony, with excellent structure. The color is ruby red; the net and intense aroma, with complex sensations of spices, vanilla and morello cherry. The taste is full, rich and persistent, with a remarkable structure and elegance.

A label, that of Farnito Cabernet Sauvignon, entered in 1998 in the list of the magnificent Top 100 in the world of Wine Spectator. A name, Farnito, taken from the oak, the type of oak of which the Carpineto estates, a totally green company, are dense.

The dish is Medallions of venison with plums, flan of polenta and roasted porcini mushrooms and also includes the use of Rosso di Montepulciano di Carpineto , a simple and ready-to-drink wine, floral and fruity, juicy and fresh for the wine reduction .

The pairing was carefully studied before being presented.
