Vinitaly 2026: Ilatium Morini chooses whites, sparkling wines, and organic wines.

There comes a point when a winery stops following the market and starts telling its story.

For Ilatium Morini , that moment is now. At the 58th edition of Vinitaly —the international wine fair that will enliven Veronafiere from April 12th to 15th with over 4,000 exhibitors, 125,000 expected visitors, and 33,000 international buyers—the Veronese winery, located in Mezzane di Sotto, will be present in Pavilion 4, Stand E7. It will offer tastings of a selection of wines that accurately reflect what the market demands today: distinctive white wines, artisanal sparkling wines , and a solid commitment to organic sustainability . This targeted positioning is not a response to trends, but the natural outcome of over sixty years of work in the Valpolicella region.

The numbers confirm this trend. In 2024, the trend for red wines showed a significant reduction in volumes, down 6.8%, while sparkling wines gained ground with an overall growth of 5% (Valoritalia 2025 Annual Report). Over the last decade, the share of white wines in national production has risen from 47% to 60% of the total, while red wines have fallen from 51% to 37% (BusinessOnLine). The enthusiasm for sparkling wines continues in 2025: total revenues will account for 4.4%, with exports accounting for 6.1% (Mediobanca). Ilatium Morini is presenting itself at Vinitaly with a clear focus: white wines and sparkling wines at the center, without sacrificing the depth of its great Veronese reds.

The Great Reds: The Winery's Memories The backbone of Ilatium Morini's production is historically rooted in the great native Valpolicella grape varieties—Corvina, Corvinone, and Rondinella—grown on calcareous-clayey soils at over 150 meters above sea level between Mezzane di Sotto, Valpantena, and Val d'Illasi. The winery's iconic reds will be on offer at Vinitaly: the " Leòn," Amarone della Valpolicella DOCG 2019 , with an aroma that ranges from notes of violet and black cherry to dark chocolate and tobacco; the Valpolicella Ripasso DOC " Ciliegi" 2020 , refermented on the Amarone pomace for 24 months in barrel, ruby red with garnet reflections, ripe red fruit, and lively tannins; the Valpolicella Superiore DOCPrognài” 2019 , aged 24 months in French oak, intense garnet, spices, licorice and a full-bodied, well-balanced palate; and finally the Valpolicella DOC Biologico 2024 , an expression of the winery’s true organic vocation, certified and produced with full respect for the hillside ecosystem.

The Heart of Vinitaly 2026: Whites, Sparkling Wines, and Organic. If the reds represent the memory of Ilatium Morini, the whites and sparkling wines chart its future direction and are the true focus of our presence at the fair in 2026.

Soave DOC "Le Calle" – 100% Garganega, 2024 harvest, organic. Thirty-year-old pergola-trained vineyards on calcareous-clay soils in the Illasi Valley. After a brief drying process and maceration in the press, it ferments in stainless steel at a controlled temperature. Bright straw yellow, aromas of yellow peach, quince, and bergamot with exotic notes. Soft and enveloping on the palate, with balanced acidity on the finish. A Soave with excellent potential for bottle aging.

Organic Soave DOC – 100% Garganega, 2025 vintage. Crystalline, pale straw yellow, fresh nose of white flowers, white-fleshed fruit, and mentholated notes. Clean progression on the palate with a bitter almond finish, the recognizable hallmark of pure organic Garganega.

Veneto Bianco IGTAmitor” – Garganega and complementary grapes, 2024 vintage, also certified organic. Immediate but not simple: a nose of great aromatic intensity of lime blossom, yellow grapefruit, pineapple, mango, and broom. Enveloping on the palate, with a savory finish and a lingering finish. Highly drinkable, it works well throughout a meal or as a starter at dinner.

Recioto di Soave DOCG " Sette Dame" – 100% Garganega, 2018 vintage, 0.50 liter bottle. The rarity of the catalog. Appassimento for 90-120 days, then 36 months in 500-liter French oak barrels. Bright golden yellow, dates, ripe tropical fruit, and honey on the nose. Sweet and smooth on the palate with a long finish and caramel finish. A meditation wine.

Garganega Spumante Metodo Charmat Brut Organic – 2024 vintage, a refined Charmat Method made exclusively from organic Garganega grapes. It features a brilliant, luminous straw yellow color and fine, persistent bubbles. The nose reveals a floral and fruity bouquet that anticipates an elegant, savory, and very fresh palate, with a lovely acidity that invites re-tasting.

" Sette su Sette" Classic Method Extra Brut Sparkling Wine – The winery's flagship, a limited edition of approximately 3,700 bottles. Aged over 70 months on the lees, with manual riddling and artisanal care throughout every stage of production. Bright straw yellow with fine bubbles, intense and complex aromas where floral and fruity notes blend with the depth that only time can create. Dry and enveloping, with a pronounced acidity, refined and precise balance. A wine capable of surprising even the most discerning palates.

Ilatium Morini will be at Vinitaly 2026 (Hall 4 – E7) , from April 12th to 15th. An invitation to discover up close a winery that, after sixty years on the Veronese hills, has found a way to remain true to itself while simultaneously looking ahead: towards whites, sparkling wines, organic wines, and a future in which every glass is an act of care towards the land that created it.
