It is the 'Natural' wine, on which schools of thought that have led some people to abhor any human intervention are based. But wine, in nature, does not exist. And those labels, which indeed many people appreciate
just because marketed without any intervention, are often equally globalizing as the 'enemy',
due tue the oxidation that characterizes them, the acetic note that makes them lively, the carbonic dynamism, which is nothing
but re-fermentation in full swing.
