On Monday, 28, at 4:00 p.m., protagonist in the Ugo Tognazzi hall. After 10 years as sous–chef at Le Calandre, within this year he is going to open his restaurant in Barbarano (Vicenza). It will be called Aqua Crua
Giuliano Baldessari, on Monday, 28 October, will be at Gusto, the biennial of flavours and territories which takes place in Venice, from 26 to 29 October at the Passengers Terminal. Starting at 4:00 p.m., along with his collaborator Simone Poser, he will share with the audience in the Ugo Tognazzi hall two dishes: "Field of scents", dedicated to the work Sonia Falcone and "My Gold is Yours", dedicated to the Neapolitan Piero Golia. Two gifts that Baldessari has decided to build for the occasion in honor of the two works on display as part of the Biennale Arte at the Venice Arsenal. The event is by reservation.
A very important moment for Giuliano Baldessari, a cook from Trentino, born in 1977, that a few months ago left Le Calandre in Rubano (Padua), where for 10 years he was sous–chef of Massimiliano Alajmo. Previously, he had worked for almost two years in Italy at Aimo and Nadia, and was chef de partie in France, in the restaurants La Ferme de mon Père in Megeve and Auberge de L’Eridan in Annecy.
Baldessari is now ready to open his restaurant in Barbarano Vicentino. It will be called Aqua Crua and will open its doors by the end of this year.
A kitchen of his abduction, where one is always better than two and where there are more and more vegetables. A cuisine that earned him in 2011 the Birra Moretti Grand Cru Award in Identità Golose. But also a cuisine of flair, imagination and joy.
«Aqua Crua is for me the culmination of a long process – Baldessari says – I am very happy with the way the restaurant is coming: it represents me as a person and as a cook».
