At Vinitaly, Ventiventi presents its new Classic Method with extended refinement of 40 and 50 months.

A choice born from the evolution of wines and a conscious investment in the value of time

Ventiventi, the Razzaboni family winery located in the wine-growing district north of Modena, will be present at Vinitaly 2026 (Hall 8 – Stand D7) to present to the public and industry professionals a significant evolution of its Metodo Classico approach, launched in recent months. The project, which recently marked a first stage of collaboration, now finds a strategic consolidation at the Verona event, providing an opportunity to strengthen the winery's positioning and reaffirm a clear production strategy: investing in time. Central to this evolution is the extension of the aging periods on the lees for the five flagship wines of the Metodo Classico range. Compared to the approximately 30 months initially planned, the winery has decided to extend the aging period to 40 and 50 months, following the natural evolution of the base wines and allowing itself to be guided by tasting and firsthand experience in the cellar. This decision, for a young winery, represents a courageous and informed one, capable of impacting both technically and stylistically. The extended maturation period has led to more complete, harmonious, and elegant wines, in which the greater aromatic complexity resulting from the extended aging on the lees complements the freshness and drinkability typical of Emilian sparkling wines. At the same time, dosage management has also been oriented toward moderate levels, with the goal of allowing the grape variety and the time to express themselves fully, avoiding corrective interventions and favoring a natural balance.

The result is a range that more precisely expresses the winery's territorial and varietal identity, without sacrificing immediacy and recognizability. The stars of this journey are the winery's five Metodo Classico wines: Blanc de Blancs and Rouge de Noirs , aged for 40 months on the lees, and Ventiventi Rosé, Brut, and Pas Dosé , which are aged for up to 50 months. These wines represent the most advanced synthesis of the winery's stylistic research. This evolutionary step confirms Ventiventi's vision: a dynamic and contemporary winery, capable of combining technical precision, production sensitivity, and a strong connection to the terroir, showcasing varietals such as Pignoletto and Lambrusco through the Metodo Classico.

Participation in Vinitaly therefore represents not only an international showcase, but a key moment to give continuity to a project already underway and strengthen its message, sharing a clear direction with the market: letting time define the style.
