Valerio Braschi and Paolo Castiglioni describe the Piave DOP cheese with unpublished recipes and author photographs.

The Visual Storytelling 2021 campaign, the photographic project signed by Paolo Castiglioni and Valerio Braschi developed - within the three-year Nice to Eat-EU project - by the Consorzio Formaggio Piave DOP presented to the press in a digital conference.

The protagonist of the 12 copyright shots is the Piave DOP cheese - in the Fresco, Mezzano and Selezione Oro references - interpreted by the skill of Valerio Braschi, Best Young Chef 2021 and winner of the sixth edition of Masterchef Italia and Paolo Castiglioni, internationally renowned food photographer .

" We liked to talk about the key values of our PDO ; the mountains and in particular the Dolomites, a UNESCO heritage site, the culture of the tradition of these lands, very focused on the dairy activity handed down from generation to generation, milk, our excellent material Piave PDO can be summarized in four important numbers: 180 production stalls , 350,000 wheels produced every year - each of which weighs about 6 kg, 35,000 wheels exported to around 30 countries in the world - first of all the USA - and 50 awards , won by Piave DOP cheese in the last 10 years. A story that combines traditional flavors of which the Piave DOP is the spokesperson and the modernity of the culinary techniques brought to the stage by chef Valerio Braschi. Shots that enhance the territory, the product and the creative flair of a young chef with clear ideas who in his training has already crossed the kitchens of half the world, from India to Japan.

"I already knew the Piave DOP because it is appreciated in my family. When the product is exceptional it should not be distorted, but elevated" so Valerio Braschi "This is what I have done through my recipes . I wanted to range from appetizers to desserts while maintaining the taste of clean cheese, combining it with ingredients that enhance its characteristics ".
