"The project with Bonverre is part of a series of initiatives of the Consortium aimed at expanding the knowledge of the versatility of our cheeses, which are excellent tasted alone, but which know how to be exceptional ingredients in the kitchen - comments Alfonso Albi , President of the Monte Veronese Consortium DOP - We are proud that even top-level chefs use Monte Veronese in their creations, becoming authoritative spokespersons for the quality of our products ". “Monte Veronese PDO from Monti Lessini is a very present cheese in our kitchen - explains chef Giacomo Sacchetto - With a savory component and in certain seasonings even spicy, we use it for various preparations. In the Bonverre recipe there is the 24-month Monte Veronese DOP, to give a slightly spicy and slightly more savory note to our recipe ". Monte Veronese is a cheese with a protected designation of origin typical of the Veneto region. The area of origin of the milk, its transformation and the maturing of the cheese is located in the northern part of the province of Verona. It is a mainly mountainous area, rich in fertile pastures, which boasts an ancient tradition of cattle breeding, mountain pastures and the production of milk and cheese. In this territory, which roughly corresponds to Lessinia, Monte Baldo and the Veronese pre-alpine hilly area, it is produced exclusively with cow's milk, in two different types: Monte Veronese "whole milk" and Monte Veronese "d'allevo", which they are distinguished by different and specific processing methods and therefore by their appearance and flavor.
