Three cocktails in pink Bardolino Chiaretto meets mixology

The common denominator of the three drinks is pink. : the basic ingredient is in fact the Chiaretto di Bardolino , the pink wine from Garda Veronese, both in the still and sparkling version. In keeping with the dual philosophy of the Bellomi family restaurant, namely territoriality and sustainability, the other ingredients present in the cocktails are also predominantly Veronese, coming from Lessinia and Lake Garda, or are obtained from products normally considered "waste" , such as lemon peels and pineapple remnants or cheese rinds. Zanéibe and Cheese is a reinterpretation of the Martini cocktail, with Chiaretto cheese pepper wine (an elaborate created in the restaurant's laboratory, starting from a base of Chiaretto di Bardolino, enriched by the aroma of Sichuan pepper and the crust of Monte Veronese cheese dried), Moi Lånt Gin Zanéibe (from Lessinia, of which it uses thirteen botanical essences) and absinthe liqueur, as well as a cube of Monte Veronese PDO cheese to replace the classic olive. Chiaroscuro , born as an alternative to spritz, is made with sparkling Chiaretto, Liquore delle Sirene Canto Amaro (produced with citrus fruits from Garda and officinal herbs from Monte Baldo), cut off cordial, tonic water and olive. The Julep Aperitif , on the other hand, is based on Chiaretto, peach liqueur, white Vermouth, Peychaud's Bitter, lemon, sugar, raspberries, fresh mint and pineapple powder. As well as the recipes, the paper version of the booklet of the Three cocktails in pink is also in the name of sustainability, printed on paper produced with cotton fibers, recycled fibers and pure cellulose fibers obtained from certified responsible forest management. The three cocktails, which are now constantly available on the AMEN drink list, were conceived on the occasion of 100 Note in Rosa , the music festival organized by the Consortium for the protection of Chiaretto and Bardolino (with the patronage of the Municipality of Verona and with the collaboration of the Monte Veronese Dop Cheese Consortium and the Frantoi Redoro) to revive the artistic and restaurant activities of Verona after the lockdown.
