Now in its third edition, Uniamo – Unconventional Wines and Dinners returns to Palermo from January 15 to 18, 2026 , confirming its position as one of the most original and visionary events in the Italian food and wine scene. This project focuses on a gentle revolution , uniting cultures, people, and languages through food, wine, and dialogue, to build a more humane and sustainable future, capable of countering the risks of the ordinary and pushing the boundaries of contemporary dining. National and international chefs, natural wines, and ideas converge conceptually in a contemporary tavern , this year's theme, intended as a place of lightheartedness, listening, and sharing. Uniamo stems from the belief that the tavern is, now more than ever, a revolutionary space, a place open to the world, where food becomes a cultural and political gesture capable of creating connections and building bridges between peoples, a blend of identities, flavors, and thoughts that finds its most authentic language in conviviality. Because every true revolution, today as yesterday, begins around a table. For four days, Palermo and Sicily become a hub of cross-fertilization , welcoming chefs from all over the world who, together with the restaurants of the Virga&Milano group – Gagini, Buatta, Aja Mola, Maison Bocum and the group's chefs – reinterpret the concept of the tavern in the languages of contemporary catering: from fine dining to trattoria, all the way to bistronomy. A key innovation of Uniamo 2026 is the expansion of the project through the involvement of "friend" restaurants, establishments with similar visions and values, who will join the Virga&Milano group to create four-handed dinners, themed meetings, and special events. In addition to the group's restaurants, the calendar will also include events at Bebop , CiCala , Forno Santa Maria , and Bottega Corsallo , further strengthening the spirit of hospitality and sharing that characterizes the event. The beating heart of the event will be Fonderia – taverna con cucina , a new venue soon to open from the Virga&Milano group in the heart of Vucciria , a neighborhood symbolic of a city that has always welcomed, embraced, and united. This convivial and open space is destined to become the home of Uniamo and a place for discussion on the future of food and beverage, amidst changes and new visions. The program will feature a packed calendar of dinners and events involving all the venues participating in the event, creating a journey throughout the city filled with meetings, exchanges, and gastronomic experiments. The event will conclude on January 18th with a grand finale party at the Fonderia , a symbolic and convivial moment celebrating the spirit of the initiative. Uniamo also broadens its horizons beyond the world of restaurants, opening a dialogue with art, music, literature, and culture . This edition's guests include Maurizio Blatto , a longtime contributor to the music magazine Rumore , an author and expert on international music trends, and the owner of the famous vinyl store "Backdoor" in Turin, and Gae Saccoccio , a wine philosopher, educator, wine blogger, and author of the book A Journey into Sake .
