Following the exceedingly successful second event in the Colombo events calendar, the experiential journey continues at the Bubbio winery in the Bormida Valley, dedicated to the story of wine through tastings, convivial dining, and special menus, combining local traditions with cultural insights.
The next event, scheduled for Friday, June 12, 2026 , at 7:00 PM, will be "The Time of Wood": an educational dinner dedicated to the evolution of Pinot Noir and the role of wood aging in shaping the wine's identity. The evening will take guests on a journey through the barrel cellar and tasting room to understand the different types of barrels, the history of aging, and the ongoing dialogue between wine, wood, and time. The star of the show will be Colombo's Pinot Noir , interpreted through different expressions and evolutions.
The sommeliers Laura Perrone and Marco Cavallotto will lead the way, together with chef Mattia Astengo , the star of the show cooking.
Laura Perrone and Marco Cavallotto explain: "It will be interesting to understand how, starting from the flower and the bunches we see in the vineyard today, we arrive at the fruit, the management of the wood, and the exchange between wine and wood: because the important thing is that the wood is always a support, and not a substitute for the wine. In fact, the finesse of Pinot Noir can already be perceived from its flower and its bunches, then the time factor plays a very important role."
Andrea Colombo , owner of the winery, comments: "The excellent response we received during the first two events confirmed the growing interest in experiences that combine wine, local produce, and cultural exploration. With "Il tempo del legno" (Time of Wood), we want to take guests on a journey that explores not only the finished wine and its perfect pairing, but everything that contributes to its evolution and identity."
The evening's menu, curated by Chef Mattia Astengo of Alparosa Pasta Fresca in Acqui Terme, will be designed to accompany the tasting of Colombo wines. It will open with an appetizer of bluefish tartare, both natural and smoked, accompanied by a citrus dressing and toasted almonds, paired with Alta Langa Rosé DOCG 2022. This will be followed by a mushroom and thyme risotto, paired with Apertura Pinot Nero Piemonte DOC. For the main course, the kitchen will present smoked pork shoulder with a berry reduction, paired with Maxima Pinot Nero Piemonte DOC 2021. The tasting will conclude with a "non-sorbet" Williams pear and Chardonnay sorbet and espresso.
Laura Perrone
After several experiences in the restaurant, hotel, and agritourism sectors, she specialized in organizing food and wine events. A FISAR (Italian Federation of Sommeliers), she currently works at Colombo Vino in Bubbio, handling receptions, winery tours, and tastings. She is also a co-founder of the cultural association "DiOgniArte APS."
Marco Cavallotto
With a degree in Law and Economics and Business, he subsequently completed his studies with a degree in Viticulture and Oenology. A FISAR sommelier, he is a FISAR area manager and course director, an ONAV taster, and a contributor to the Slow Wine and Slow Food Osterie d'Italia guides.
Mattia Astengo
A chef with a degree in food and wine from Artusi in Casale Monferrato, he is a member of the Disciples of Escoffier in Piedmont and Valle d'Aosta. After various professional experiences throughout Italy, he chose to return to his roots to open, together with his partner Chiara Calcagno, a fresh pasta and delicatessen dedicated to Piedmontese tradition. The project was born with the aim of showcasing the region through the exclusive use of local ingredients, such as Piedmontese Fassona beef, the protagonist of iconic dishes like veal with tuna sauce and the filling for their ravioli. Every day, their work is driven by the desire to bring quality, tradition, and a touch of innovation to the table, with passion and respect for Italian cuisine.

An event that takes you back in time, discovering the history of Pinot Noir in the Langhe and Monferrato regions: its connection to the land, the local nobility, and Piedmont's winemaking tradition. A symbol of elegance and refinement, Pinot Noir opens a series of events dedicated to the history of the Savoy family, noble courts, and period cuisine, in a fascinating narrative and gastronomic journey. The educational tour will be led by winemaker and FISAR speaker Luigi Bertini . He will be joined by sommeliers Laura Perrone and Marco Cavallotto.
The show cooking will be curated by chef Mattia Astengo.
