Italian White Wine Torchiato

Description of the wine: Torchiato di Fregona is a brilliant, intense, original raisin wine. It is the result of quality-oriented viticulture and winemaking, with attention to every detail, from the vineyard to the glass. Organoleptic characteristics: Torchiato di Fregona has strong golden yellow color. It has an intense and characteristic aroma and, in the mouth, it tastes from dry to sweet, round, full, persistent. Historical-cultural information and curiosities: The most famous legend tells that in 1600 a farmer of the Ciser (Fregona) area, had to harvest its grapes early because of a terrible frost. He discovered that in the barn, sunny and breezy enough, the grapes were able to complete the maturation phase, spread out on racks. Once dried, the grapes were very sweet but very hard, so, after pressing, he put the mixture in small barrels until the following year. The result was an extraordinary wine, incredibly sweet and intense. Serving suggestions: Torchiato of Fregona is excellent with desserts, especially dried pastry, and with cheese. But it is also excellent as a sipping wine because of its intense and brilliant character. Production area: The territories of the following municipalities in the province of Treviso: Conegliano, Susegana, Pieve di Soligo, Farra di Soligo, Refrontolo, San Pietro di Feletto, Miane, Follina, Cison Valmarino, Lago di Revine, Tarzo, Vittorio Veneto, Fregona, Sarmede, Cappella Maggiore Cordignano, Colle Umberto, San Fior, San Vendemiano, and Vidor. Production techniques: At harvest, the grapes of each row are carefully selected depending on the degree of maturity, and then are gently laid down into wooden or plastic boxes of a weight that can not exceed 3.5 kg, to prevent the grapes from breaking. The drying takes place in sheltered, ventilated, with soft lighting places, provided with balconies that are closed when the weather is humid. Grape varieties that are allowed to produce it: Prosecco (minimum 30%), Verdiso (minimum 30%) and Boschera (minimum 25%). To produce this wine, for a maximum of 15%, white grape varieties authorized by the province of Treviso can contribute.
