Italian White Wine Tenatius

Organoleptic characteristics: The Tenatius wine has yellow color with golden reflections. It has a floral and fruity aroma, very complex, with hints of honey, cinnamon and fruit. In the mouth it is moderately sweet, with great balance of alcohol, sugar and acidity. Historical-cultural infos and curiosities: The special name of this wine comes from Publius Tenazio Essimno, wine merchant in Bavaria between the second and third centuries AD. Serving suggestions: It is a dessert wine: it is excellent with cream cakes, fruit and dry pastry, with pies or cookies. The Tenatius can be enjoyed optimally if the sweets that accompany it do not exceed the sweetness of the wine itself. Production area: Hills of Trentino, where the winds of Lake Garda favor the evaporation of water from the grapes in order to obtain a great raisin wine. Production techniques: The harvest is delayed as much as possible to ensure the over-ripening of the grapes. Then, clusters are placed on racks in very windy places, so that they can wither and thus achieve a high sugar concentration. After pressing and fermentation at low temperatures, sugar becomes for 2/3 alcohol, while 1/3 remains sugar residue. Grape varieties allowed to produce it: Riesling, Gewürztraminer and Sauvignon Blanc.
