Type: dry white wine.
Colour: intense straw yellow colour.
Aroma: at the nose intense, the notes of exotic fruits such as banana and pineapple blend with roasted aromas of vanilla.
Palate: in your mouth, warm and enveloping, return of the fruit wiht tertiary evolutions of flint.
Typical pairings: structured wine, all–round wine. Ideal with dishes based on fish and shellfish. It goes well with risotto and white meat.
Storage: it keeps keeps fresh its aroma for about 3–4 years; like all wines it should be stored in a cool place (below 18 degrees) and with low light, not subject to changes of temperature. Serving temperature 12–13°C.
Harvest: first fortnight of September, hand picked in crates with selection of grapes.
Winemaking: once perfectly ripe, grapes are harvested by hand in the first ten days of September and immediately vinified in the wine cellar next to the vineyard. After cleaning for static settling in stainless steel, alcoholic fermentation takes place.
This begins in steel and then is naturally completed without any aid of technologies in wood, where the complete transformation of sugars into alcohol takes place. It is during this slow fermentation that the continuous "batonnage" allow the protection from oxidation and, in particular, the obtaining of a full and well–balanced product. Once fermentation is completed, wine ages in wood for a few months at the end of which it is brought again to steel for a resting phase that allows the complete evolution to the product.
