Type: sparkling white wine.
Color: straw yellow with greenish reflections, very fine and persistent perlage.
Aroma: intense with hints of cut grass and fruit, elegant and persistent.
Taste: soft, unobtrusive, it enhances its structure maintaining excellent freshness and drinkability.
Gastronomy: excellent as an aperitif and with starters of salami.
Storage: it keeps its characteristics for 1–2 years; like all wines it should be stored in a cool place (below 18 degrees) and with low light not subject to high temperature changes.
Harvest: made at physiological maturity towards the end of August, harvest by hand with selection of the less mature bunches.
Vinification: gentle cold pressing in saturated with N2 environment, slow fermentation that takes place in 20 days in cold.
Foaming: it is carried out with the use of specially selected yeasts. The second fermentation takes place in about 25 days, with a following period of over four months during which fermentation lees are held in suspension; this operation called long Charmat gives sparkling wine its characteristic fragrance, in addition to the finesse and persistence of its bubbles.
