Produced from grapes harvested by hand from Cembra Valley at an altitude between 400 and 600 meters sea-level. It is the result of a careful selection of Pinot Nero grapes (45%) and Chardonnay (55%), grown with Trento arbour method and gujot with plantation density of 3,500-4,500 vines per hectare, picked by hand during the first ten days of September. After the tirage, it is aged in an underground cellar at a constant temperature of 12-13 C for over 18 months on its yeasts. Grapes are processed according to the traditional method in accordance with the rules TRENTO D.O.C.. It has abundant foam with a highly persistent crown and a highly fine continuous perlage. Its colour is bright old-rose. Its aroma is intense, elegant with fruity notes that reminds of the characteristics of Pinot Nero such as blackcurrant, blackberry, raspberry and wild strawberry. As tasted it is fresh, clean with a good complexity that intensifies the fruity sensations. The persistent aftertaste highlights the flavours of yeast accompanied by pleasant varietal notes of Chardonnay and by the elegance of Pinot Nero.
