Winemaking: vintage Franciacorta wines of Ca' Del Bosco are obtained by selecting the best grapes from the historical vineyards of the company, which are over 31 years old. The base wines are exclusively obtained from the alcoholic fermentation of the first musts (about 45% of the grape's weight) that takes place in temperature-controlled steel vats and, for some batches, in small oak barrels. After waiting at least 8 months, to allow the wine to refine and become clear, the following step is the creation of each cuvée. The cuvée of Dosage Zero Millesimato is the result of a careful blend of base wines made from Chardonnay (60%), Pinot Blanc (23%) and Pinot Noir (17%) searching for that character and that impeccable flavour balance which can not be modified until marketed. During the degorgement step, in fact, Dosage Zero receives no added sugar with the liqueur. The long aging in the bottle takes place in underground cellars at a constant temperature of 12C.
