With sulfites we mean the free sulfur dioxide, sulphurous acid ion, sulfuric acid and other sulfur complexes. Sulfites are measured in parts per million or ""ppm". Very few wines have sulfites below 10 ppm and above 60 ppm. See Sulphur.
