Fermentation in barrique

Most of the wines are fermented in stainless steel or wooden tanks, but some white wines of high quality are made as in Burgundy, where wine is fermented and aged in small oak barrels. It is a costly, risky and challenging process, but you obtain a wine of great structure, complexity and fragrance. Red wines are rarely fermented in barrels, because juice and skins are fermented together, making the process much more difficult.
